Anchovies, capers, garlic, olives—what's not to love?

Ingredients
- 250 g (approximately 1 cup) black olives
- 1 clove garlic
- 6 salted anchovy fillets
- 3 tablespoons chopped capers
- Small bunch of parsley
- 4 tablespoons Nudo Extra Virgin Olive Oil
- Sea salt and freshly ground black pepper
Method
- Begin by preparing all the ingredients.
- Pit the olives and set them aside.
- Peel the garlic clove and cut it into four pieces.
- Remove any bones from the anchovies, rinse, and cut them into pieces.
- Roughly chop the parsley.
- Place all the ingredients into a blender and blend, gradually adding the extra virgin olive oil until it reaches a smooth, creamy consistency.
- Serve on freshly toasted bread or as a dip with taralli or Nudo's olive oil biscuits.
